Housed in a beautiful old stone building, the Hostellerie Le Castellas is not only a three star hotel of charm, but also a two star restaurant located in the southern village of Collias.

It is also a magical place, restored by Chantal and Raymond Aparis who sublimate the existing by introducing, with advice from decorators and interior designers, a new mindset where everyone appreciates the art of good life punctuated by the unique personality of each room, the beauty of the location, warm welcome and tranquility of the garden.

Aurelie degree in international hotel management, has joined his parents for 10 years to perpetuate the family history and cultivate a new dynamic. It is accompanied by her husband David Perrier, who created the lush garden of Castellas, but also a landscaping company « En vert du décor » to cultivate his green desires.

Lastly, that is a step of gourmet gastronomy, innovative and dynamic directed masterfully by chef Jerome Nutile, who, with his first Michelin star won in 2006, then Master Chef in 2007 and a second Michelin star obtained in 2009, doesn't cease to share his passion for cooking through a subtle menu inspired from local tradition and to give appointments for priviliged people for private cooking classes.
